Since summer is often fleeting in Minnesota, I try to spend as much time outdoors as possible, which includes mealtimes. Recently, rather than choosing between Jimmy Johns or a grocery store deli salad, my coworker and I ventured to downtown Minneapolis and dined al fresco, food truck style.
Over the past few years, food trucks have gained enormous popularity across the country. Between festivals, TV shows and cookbooks, food trucks are finding their place in the culinary industry. In the Twin Cities, there are more than 30 food trucks out on the streets on any given weekday. Many trucks have a set schedule while others pop up here and there, alerting customers via social media.
Upon arriving downtown, we were overwhelmed by the delicious options. Whether you’re in the mood for arepas, a curry chicken sandwich or a buffalo turkey burger, there’s something for everyone. After scouring the streets, we decided on mini pulled pork sliders with pickles and onions from Chef Shack.
